Having spent 35 years in the kitchen, working his way up from junior dishwasher at age 14, and running multi million dollar kitchens around the world, Martin has been lucky enough to work his way through the UK, Austria, France, the US, Spain and now here in Australia.

Being 5th generation in hospitality, chef patron of the 1st gastropub in his home county in the UK, receiving accolades from major British institutions for quality of both produce and product, his first thought is to the provenance of ingredient.

Getting to the markets at 4am and finishing at 11 at night for over a decade, it was time for a change, so a traditional Andalusian beach restaurant it was.

After 10 years in Spain, owning a Merendero and cooking the freshest fish directly from his beach, predominantly on olive wood, it was again time for a change. Hence Australia (can’t beat a good Ashes match).

Now a citizen of this country and having worked in and set up award winning restaurants in South Australia and the Northern Territory, Martin believes that the future “pan burners” need to be nurtured, he offers a high level of training, mentoring and playing a part in a great hospitality culture, both in the NT and across this great country.

With the concept of Phat Mango by Martin the Chef being all things good about Australian food and drink, it is time to create a culinary identity for both locals and travellers to enjoy!

The industry has allowed him to eat the best, produce the best, meet the best: long may it continue and long may Phat Mango's banging local food put a smile on your tastebuds.

Ryan Hamilton

Thoughts

Hailing from the small town of Port Fairy in Victoria, Ryan started his culinary journey in a buzzing food area in that region. Moving to the Territory in 2015, Ryan has been Head Chef for a variety of styled restaurants: running modern style breakfast at a hip café, traditional brunch, tapas and a wealth of time doing large, pop up, outside catering events, from a wedding in a mango plantation to an executive dinner on the rooftop of a local hotel to a corporate soiree in a plane hangar.

With a love for creating flavour profiles that excite your palette, Ryan also has a passion for creating traditional charcuterie and classical cookery.

Having just returned from two years in Europe, furthering his culinary knowledge especially around Nordic foods, Ryan has found Darwin to be a place he can call home.

With great fishing, superb beaches and the chance to put the Territory on the culinary map…Why wouldn’t you?

 

 

General Manager

Tristram Winter

Thoughts

With over 16 years in the Liquor and Hospitality Industry, Tristram spent his formative years running Liquor Stores across the greater Adelaide region from McLaren Vale to Mile End and in-between. Finding his passion for all things alcohol, especially finding a deep love for wine, thus spurring his move to the Territory.

Tristram moved to the Territory at the end of 2010, working as a sales rep for Treasury Wine Estates and then George Street Wines. He then helped open and operate the wine and tapas bar, Viva La Vida in Smith Street Mall back in 2012, where he stayed for the duration of the 5 years it was open as Venue Manager.

In 2017, Tristram had the privilege of taking the position of General Manager of the historic Nirvana Restaurant, a renown Darwin restaurant with locals that has been operating for more than 25 years.

Now, as part of the Phat Mango family, he wants to spread the word about all things Australian in wines and spirits and highlight their various nuances to the greater public.
